Location of vineyards:
  • Calvagese della Riviera, Muscoline and Gavardo, low hilly region (260m.); cultivated in respect of the ecosystem.
Growing method:
  • Spurred string.
Produced from following grapes:
  • Chardonnay, Pinot Noir, Riesling Renano, harvested by hand in boxes at the end of August.
Manufacturing:
  • Natural refermentation in the bottle, matured with yeasts for at least 24 months: manual mixing on “pupitres”, 3 months refinement, after spill out, bottled and in cardboard box packaging before sale.
Organoleptic Test:
  • Colour: Brilliant green with golden reflections, fine perlage and persistent sparkling, rich foam, soft and silky;
  • Perfume: fresh with delicate scents of fruit, brioche bread and vanilla;
  • Taste: Dry, with a slightly sour vein, vigorous;
  • Alcohol content: 12% vol;
  • Sugar content: 6.2/6.7 gr/lt.
 Ideal with:
  • Accompanies: Italian hors d’oeuvres, crustacean, oyster and boiled fish soups and dry pasta deserts. Also excellent for the entire meal;
  • Serving temperature: 8°C;
  • Serving method: best served in an ice bucket since it must be served well-chilled.
