Location of vineyards:
Calvagese Riviera, Prevalle, Muscoline: medium slope (260 m ASL), with ecological system. Pruning: spurred string and guyout. Produced from following grapes: Solely Pinot nero. Manufacturing: hand picked grapes laid in small wooden crates; after fermentation in barrique for around 40 days, the wine is left to age in large oak casks for at least twelve mounts. After bottling, the wine is refined in bottle cartons for at two months before shipping to retailers. Organoleptic Test: - colour: strong ruby red; - perfume: pleasant blackcurrant scent, delicate wildberries, bitter almond and jujube; - taste: dry, full-bodied, tannic; - strength: 12.5°. Gastronomy: - with ham and shoulders of meat, baked fish, grilled meats and fowl, semi-seasoned cheeses; - serve: uncork 30 minutes before serving; - serve at 18-20° C. Annual production: 15.000 bottles. |
